Abstract
Una mezcla de grasa de margarina y una parte para untar de emulsion W/O plástica , que comprende 5-14% de una pasta dura o hidrogenada que es una fraccion de estearina de una mezcla de interesterificada de 25-65% de la estearina de grasa láurica sin hidrogenar y 75-35% de estearina de grasa de C16+ sin hidrogenar. También se proporciona un proceso para preparar tal pasta dura o sin hidrogenar sin el uso de modificaciones químicas o solventes o fraccionacion Lanza. Como subproducto de este proceso, una fraccion de oleína puede obtenerse adecuada para utilizarse en grasas para cocinar u hornear o pastas para untar en emulsion W/O.
