Abstract

L’invention s’inscrit dans le domaine de l’industrie agroalimentaire de l’industrie pharmaceutique et cosmétique. Elle trouve application en industrie agroalimentaire particulièrement dans la production de stabilisants alimentaires extraits à partir des graines de la caroube appelés ‘’locust bean gum’’. L’invention concerne un procédé de décorticage de la graine de caroube par action couplée d’une enzyme et d’ultrasons, conduisant au ramollissement du tégument constituant l’enveloppe de ladite graine. Le détachement du tégument est rendu plus facile avec la préservation de l'intégrité structurelle et fonctionnelle des composés hydrolysés.
