Abstract

본 발명은 고형피자소스에 관한 것으로서, 더욱 상세하게는 토마토페이스트, 전분 및 물을 주성분으로 하고 식초와 카라기난 등을 첨가하고 가열한 다음 앵각하여 고형화시켜 제조된 것으로써 피자소스 향미를 그대로 살리면서 부원료로서 제품에 투입하면 색상과 형태면에서 식감을 부여하고, 또한 액상피자소스에 비해 보관성이 뛰어난 고형피자소스에 관한 것이다.

Claims (1)

  1. 고형분 함량 10∼35%인 토마토페이스트 20∼50중량%의 전분 20∼40중량%, 물 20∼40중량%, 설탕 3∼8중량%, 소금 2∼5중량%, 양파 분말 0.2∼0.8중량%, 식초 1∼5중량%, 카라기난 0.2∼1중량%, 오레가노, 베이실, 후추 각각 0.2∼0.5중량% 및 천연적색색소 0.05∼0.5중량%로 이루어진 것을 특징으로 하는 고형피자소스.
