Claims (2)
- 전분질을 많이 함유한 곡류를 배전한후, 세균성 α-아밀라아제 및 아미노산류를 가하여 80-140℃의 온도에서 세균성 α-아밀라아제의 전분 분해 반응 및 당류와 아미노산류의 마이야르 반응을 동시에 수행함을 특징으로 하는 곡류를 사용한 기호성 청량음료 원액의 제조방법.
- 전분질을 많이 함유한 곡류를 배전하여 세균성 α-아밀라아제의 전분 분해 반응 및 마이야르 반응을 동시에 수행한 후 반응액의 pH를 4.0∼2.0으로 조정하여 식이섬유 (Dietary Fiber)를 겔화 침전시킴을 특징으로 하는 식이섬유 농축물의 제조방법.
