Abstract
Description
Claims (5)
- 막창을 준비하고, 준비한 막창을 세척하는 제1단계;
세척한 막창을 훈제막창용 소스와 혼합하여 양념막창을 제조하는 제2단계;
제조한 양념막창을 40 ~ 80℃에서 5 ~ 20분동안 1차 훈연시키는 제3단계;
1차 훈연시킨 양념막창을 40 ~ 80℃에서 5 ~ 20분동안 2차 훈연시키는 제4단계; 및
프라이팬에 2차 훈연시킨 양념막창을 투입한 후, 프라이팬을 가열시켜 훈제막창을 제조하는 제5단계;
를 포함하는 것을 특징으로 하는 훈제막창 제조방법.
- 제1항에 있어서,
상기 제1단계는 진공상태에서 막창을 세척하는 것을 특징으로 하는 훈제막창 제조방법.
- 제1항에 있어서,
상기 제2단계는 세척한 막창과 훈제막창용 소스는 1 : 0.2 ~ 0.6 중량비로 혼합하고,
상기 혼합은 진공상태에서 수행하는 것을 특징으로 하는 훈제막창 제조방법.
- 제1항에 있어서,
상기 제3단계의 1차 훈연은 대나무에서 발생하는 연기를 이용하여 수행되고,
상기 제4단계의 2차 훈연은 함초에서 발생하는 연기를 이용하여 수행되는 것을 특징으로 하는 훈제막창 제조방법.
- 제1항 내지 제4항 중 어느 한 항의 제조방법으로 제조된 훈제막창.
