Claims (6)
- 삭제
- (1) 닭발을 세척하는 단계;
(2) 닭발의 껍질을 제거하는 단계;
(3) 닭발의 발목뼈와 발가락뼈의 관절 부위를 절개하여 발가락뼈와 발톱을 동시에 제거하는 단계;
(4) 닭발의 발목부를 절개하여 발목부 상단의 뼈의 절반 정도를 분리하는 단계;
(5) 상기 뼈가 제거된 닭발을 염지액에 침지하여 4℃ 내지 10℃에서 20 내지 24시간 동안 염지시키는 단계;
(6) 상기 염지된 닭발을 150℃ 내지 180℃의 스팀으로 20분 내지 40분간 익히는 단계;
(7) 상기 익힌 닭발을 4℃ 내지 10℃로 급속냉각하는 단계; 및 (8) 상기 닭발에 양념을 가하여 혼합하는 단계; 를 포함하되,
상기 염지액이 소금 0.3 내지 0.9 중량% , L-글루탐산나트륨 0.1 내지 0.3 중량%, 설탕 0.1 내지 0.3 중량%, 블루베리 잎 1 내지 5 중량% 및 잔량의 물로 구성되는 것을 특징으로 하는, 닭발을 이용한 식품의 제조방법.
- (1) 닭발을 세척하는 단계;
(2) 닭발의 껍질을 제거하는 단계;
(3) 닭발의 발목뼈와 발가락뼈의 관절 부위를 절개하여 발가락뼈와 발톱을 동시에 제거하는 단계;
(4) 닭발의 발목부를 절개하여 발목부 상단의 뼈의 절반 정도를 분리하는 단계;
(5) 상기 뼈가 제거된 닭발을 염지액에 침지하여 4℃ 내지 10℃에서 20 내지 24시간 동안 염지시키는 단계;
(6) 상기 염지된 닭발을 150℃ 내지 180℃의 스팀으로 20분 내지 40분간 익히는 단계;
(7) 상기 익힌 닭발을 4℃ 내지 10℃로 급속냉각하는 단계; 및 (8) 상기 닭발에 양념을 가하여 혼합하는 단계; 를 포함하되,
상기 염지액이 소금 0.3 내지 0.9 중량%, L-글루탐산나트륨 0.1 내지 0.3 중량%, 설탕 0.1 내지 0.3 중량%, 블루베리 잎 추출액 0.1 내지 3 중량% 및 잔량의 물로 구성되는 것을 특징으로 하는, 닭발을 이용한 식품의 제조방법.
- 제2항 또는 제3항에 있어서,
상기 단계 (7)의 급속 냉각이 10 내지 20분간 수행되는 것을 특징으로 하는, 닭발을 이용한 식품의 제조방법.
