Abstract
Description
도 2는 본 발명의 식품의 제조에 일반 우유를 용매로 사용하고, 부가 재료로 호박 가루, 쑥 가루, 북어 가루, 흑임자 가루 또는 고구마 가루를 사용하여 제조한 뒤 바로 및 5 ~ 10시간 경과 후의 사진이다.
도 3은 본 발명의 식품의 제조에 락토프리 우유를 용매로 사용하고, 부가 재료로 호박 가루, 쑥 가루, 북어 가루, 흑임자 가루 또는 고구마 가루를 사용하여 제조한 뒤 바로 및 5 ~ 10시간 경과 후의 사진이다.
Claims (14)
- (a) 가루멥쌀, 호화 쌀가루, 곤충가루, 아몬드 가루, 백옥앙금 및 소금을 첨가하고 혼합하는 단계;
(b) (a)단계를 거친 혼합물에 물과 막걸리를 첨가하고 찌는 단계;
(c) 찐 혼합물을 건조하고 분쇄하여 분말화하는 단계;
(d) 물 또는 우유에 타서 으깨는 단계; 및
(e) 3D 프린터기에 넣고 프린팅하는 단계;를 포함하는, 연하· 저작 곤란자용 3D 프린팅 식품 제조방법. - 제1항에 있어서,
상기 (a)단계에서 가루멥쌀, 호화 쌀가루, 곤충가루, 아몬드 가루, 백옥앙금 및 소금은 상기 완성된 혼합물의 총 중량부에 대해, 가루멥쌀을 270 ~ 330 중량부, 호화 쌀가루를 10 ~ 20 중량부, 곤충가루를 10 ~ 20 중량부, 아몬드 가루를 10 ~ 20 중량부, 백옥앙금을 200 ~ 300 중량부 및 소금을 5 ~ 10 중량부로 포함하는 것을 특징으로 하는, 연하· 저작 곤란자용 3D 프린팅 식품 제조방법. - 제1항에 있어서,
상기 (b)단계에서 물 및 막걸리는 1:1의 부피비로 혼합할 수 있고, 상기 물 및 막걸리의 첨가량은 완성된 혼합물의 총 중량부에 대해 60 ~ 80 중량부로 첨가하는 것을 특징으로 하는, 연하· 저작 곤란자용 3D 프린팅 식품 제조방법. - 제1항에 있어서,
상기 (b)단계의 찌는 단계는 90 ~ 110℃에서 30 ~ 50분간 찌는 것을 특징으로 하는, 연하· 저작 곤란자용 3D 프린팅 식품 제조방법. - 제1항에 있어서,
상기 (c)단계의 건조는 60 ~ 80℃의 온도에서 25 ~ 35시간 건조기에서 건조시키는 것을 특징으로 하는, 연하· 저작 곤란자용 3D 프린팅 식품 제조방법. - 제1항에 있어서,
상기 (c)단계의 분말화 단계 이후 쑥 가루, 호박 가루, 흑임자 가루, 북어 가루 또는 고구마 가루를 추가하는 단계를 더 포함하는 것을 특징으로 하는, 연하· 저작 곤란자용 3D 프린팅 식품 제조방법. - 제1항 내지 제6항 중 어느 한 항의 방법으로 제조된 연하· 저작 곤란자용 3D 프린팅 식품.
- 제7항에 있어서,
비타민류를 더 포함하는 것을 특징으로 하는 연하· 저작 곤란자용 3D 프린팅 식품. - 제1항 내지 제6항 중 어느 한 항의 방법으로 제조된 노인용 3D 프린팅 식품.
- 제9항에 있어서,
비타민류를 더 포함하는 것을 특징으로 하는 노인용 3D 프린팅 식품. - 제1항 내지 제6항 중 어느 한 항의 방법으로 제조된 환자용 3D 프린팅 식품.
- 제11항에 있어서,
