Claims (12)
- 녹차 폴리페놀을 15중량ppm ~ 500중량ppm 함유하면서도, 이 유지중의 유화제 함유량이 녹차 폴리페놀 함유량의 2배 이하인 초콜릿류용 유지.
- 청구항 1의 기재에 있어서,
녹차 폴리페놀의 함유량이 30중량ppm ~ 500중량ppm, 및 하기 방법으로 얻을 수 있는 A/N의 값이 2.0 이상인 초콜릿류용 유지.
A: 녹차 폴리페놀을 30중량ppm ~ 500중량ppm 함유한 초콜릿류용 유지의 CDM 안정성 시간
N: 녹차 폴리페놀을 포함하지 않은 상기 A의 베이스 유지의 CDM 안정성 시간 - 청구항 1 또는 청구항 2의 기재에 있어서,
녹차 폴리페놀의 함유량이 100중량ppm ~ 500중량ppm, 유화제 함유량이 50중량ppm ~ 1000중량ppm, 다만 유화제 함유량은 녹차 폴리페놀 함유량의 2배 이하, 및 하기 방법으로 얻을 수 있는 A/N의 값이 2.0 이상인 초콜릿류용 유지.
A: 녹차 폴리페놀을 100중량ppm ~ 500중량ppm 함유한 초콜릿류용 유지의 CDM 안정성 시간
N: 녹차 폴리페놀을 포함하지 않은 상기 A의 베이스 유지의 CDM 안정성 시간 - 청구항 1 또는 청구항 2에 기재된 초콜릿류용 유지를 사용한 초콜릿류로서, 전유분중의 녹차 폴리페놀의 함유량이 30중량ppm ~ 500중량ppm인 초콜릿류.
- 청구항 1 또는 청구항 2에 기재된 초콜릿류용 유지를 사용하고, 전유분중의 녹차 폴리페놀의 함유량이 30중량ppm ~ 350중량ppm이면서도, 유분이 20중량% ~ 70중량%인 초콜릿류.
- 녹차 폴리페놀을 15중량ppm ~ 500중량ppm 함유하면서도, 이 유지중의 유화제 함유량이 녹차 폴리페놀 함유량의 2배 이하인 냉과용 유지.
- 청구항 6의 기재에 있어서,
녹차 폴리페놀의 함유량이 30중량ppm ~ 500중량ppm, 및 하기 방법으로 얻을 수 있는 A/N의 값이 2.0 이상인 냉과용 유지.
A: 녹차 폴리페놀을 30중량ppm ~ 500중량ppm 함유한 냉과용 유지의 CDM 안정성 시간
N: 녹차 폴리페놀을 포함하지 않은 상기 A의 베이스 유지의 CDM 안정성 시간 - 청구항 6 또는 청구항 7의 기재에 있어서,
유지, 야자유, 팜유 및 팜핵유로 이루어진 군으로부터 선택된 1종 이상의 유지를 주요 원료로 하는 냉과용 유지로서, 녹차 폴리페놀의 함유량이 150중량ppm ~ 400중량ppm, 유화제 함유량이 100중량ppm ~ 500중량ppm, 이 유지중의 유화제 함유량이 녹차 폴리페놀 함유량의 1.5배 이하, 및 하기 방법으로 얻을 수 있는 A/N의 값이 5.0 이상인 냉과용 유지.
A: 녹차 폴리페놀을 150중량ppm ~ 400중량ppm 함유한 냉과용 유지의 CDM 안정성 시간
N: 녹차 폴리페놀을 포함하지 않은 상기 A의 베이스 유지의 CDM 안정성 시간 - 청구항 1 또는 청구항 2의 기재에 있어서,
초콜릿류용 유지로서, 녹차 폴리페놀의 함유량이 300중량ppm ~ 500중량ppm, 유화제 함유량이 100중량ppm ~ 750중량ppm, 다만 유화제 함유량은 녹차 폴리페놀 함유량의 1.5배 이하, 및 하기 방법으로 얻을 수 있는 A/N의 값이 3.0 이상인 초콜릿류용 유지.
A: 녹차 폴리페놀을 300중량ppm ~ 500중량ppm 함유한 초콜릿류용 유지의 CDM 안정성 시간
N: 녹차 폴리페놀을 포함하지 않은 상기 A의 베이스 유지의 CDM 안정성 시간 - 청구항 6 또는 청구항 7에 기재된 냉과용 유지를 사용한, 냉과의 광열화 내성을 향상시키는 방법.
- 청구항 1 또는 청구항 2에 기재된 초콜릿류용 유지를 사용한, 초콜릿류의 광열화 내성을 향상시키는 방법.
- 청구항 1 또는 청구항 2에 기재된 초콜릿류용 유지를 사용한, 초콜릿류의 광조사에 따른 퇴색을 억제하는 방법.
