Claims (23)
- 유지 난용성 성분을 함유하는 면류 생지용 유지 조성물.
- 청구항 1에 있어서, 유지 난용성 성분으로서 아스코르빈산, 에리소르빈산, 젖산, 주석산, 및 말산, 및 이의 염으로 이루어진 군으로부터 선택된 적어도 1종의 유기산 또는 그 염을 2 중량ppm~1500 중량ppm 함유하는 면류 생지용 유지 조성물.
- 청구항 1에 있어서, 유지 난용성 성분으로서 말로닐이소플라본 배당체를 2 중량ppm~750 중량ppm 함유하는 면류 생지용 유지 조성물.
- 청구항 3에 있어서, 아스코르빈산, 에리소르빈산, 젖산, 주석산, 및 말산, 및 이의 염으로 이루어진 군으로부터 선택된 적어도 1종의 유기산 또는 그 염을 2 중량ppm~1500 중량ppm 함유하는 면류 생지용 유지 조성물.
- 청구항 2에 따른 면류 생지용 유지 조성물을 20 중량% 이상 함유하고, 아스코르빈산, 에리소르빈산, 젖산, 주석산, 및 말산, 및 이의 염으로 이루어진 군으로부터 선택된 적어도 1종의 유기산 또는 그 염을 2 중량ppm~300 중량ppm 함유하는 면류 생지용 유지.
- 청구항 5에 있어서, 분말 형태인 면류 생지용 유지.
- 청구항 3에 따른 면류 생지용 유지 조성물을 20 중량% 이상 함유하고, 말로닐이소플라본 배당체를 2 중량ppm~300 중량ppm 함유하는 면류 생지용 유지.
- 청구항 7에 있어서, 분말 형태인 면류 생지용 유지.
- 청구항 4에 따른 면류 생지용 유지 조성물을 20 중량% 이상 함유하고, 아스코르빈산, 에리소르빈산, 젖산, 주석산, 및 말산, 및 이의 염으로 이루어진 군으로부터 선택된 적어도 1종의 유기산 또는 그 염을 2 중량ppm~300 중량ppm, 및 말로닐이소플라본 배당체를 2 중량ppm~300 중량ppm 함유하는 면류 생지용 유지.
- 청구항 9에 있어서, 분말 형태인 면류 생지용 유지.
- 면류 생지 100 중량부에 대해서 청구항 5 또는 6에 따른 면류 생지용 유지를 0.1~10 중량부 함유하는 면류 생지.
- 청구항 11에 있어서, 면류 생지용 유지로부터 유래하는 아스코르빈산, 에리소르빈산, 젖산, 주석산, 및 말산, 및 이의 염으로 이루어진 군으로부터 선택된 적어도 1종의 유기산 또는 그 염의 함유량이 0.1 중량ppm~50 중량ppm인 면류 생지.
- 면류 생지 100 중량부에 대해서 청구항 7 또는 8에 따른 면류 생지용 유지를 0.1~10 중량부 함유하는 면류 생지.
- 면류 생지 100 중량부에 대해서 청구항 9 또는 10에 따른 면류 생지용 유지를 0.1~10 중량부 함유하는 면류 생지.
- 청구항 13에 있어서, 면류 생지용 유지로부터 유래하는, 말로닐이소플라본 배당체의 함유량이 0.1 중량ppm~50 중량ppm인 면류 생지.
- 청구항 14에 있어서, 면류 생지용 유지로부터 유래하는 아스코르빈산, 에리소르빈산, 젖산, 주석산, 및 말산, 및 이의 염으로 이루어진 군으로부터 선택된 적어도 1종의 유기산 또는 그 염의 함유량이 0.1 중량ppm~50 중량ppm이고 말로닐이소플라본 배당체의 함유량이 0.1 중량ppm~50 중량ppm인 면류 생지.
- 청구항 5 내지 10 중 어느 한 항에 있어서, 면류 혼입용인 면류 생지용 유지.
- 청구항 5 내지 10 중 어느 한 항에 따른 면류 생지용 유지를 면류에 혼입하는 것을 특징으로 하는 면류의 제조 방법.
- 청구항 18에 있어서, 면류에 혼입한 후에, 건조하는 공정을 포함하는 면류의 제조 방법.
- 청구항 5 내지 10 중 어느 한 항에 따른 면류 혼입용 유지를 면류에 혼입하는 것을 특징으로 하는, 면류의 풍미 개선방법.
- 아스코르빈산, 에리소르빈산, 젖산, 주석산, 및 말산, 및 이의 염으로 이루어진 군으로부터 선택된 적어도 1종의 유기산 또는 그 염을 수성 매체에 첨가하여, 용액 상태로 유지에 첨가하는 것을 특징으로 하는 청구항 2에 따른 면류 생지용 유지 조성물의 제조 방법.
- 말로닐이소플라본 배당체를 수성 매체에 첨가하여, 용액 상태로 유지에 첨가하는 것을 특징으로 하는 청구항 3에 따른 면류 생지용 유지 조성물의 제조 방법.
- 아스코르빈산, 에리소르빈산, 젖산, 주석산, 및 말산, 및 이의 염으로 이루어진 군으로부터 선택된 적어도 1종의 유기산 또는 그 염, 및 말로닐이소플라본 배당체를 수성 매체에 첨가하여, 용액 상태로 유지에 첨가하는 것을 특징으로 하는 청구항 4에 따른 면류 생지용 유지 조성물의 제조 방법.
