Abstract
본 발명에 따르면, 고감미도 감미료에 대한 정미(呈味) 개량 조성물, 고감미도 감미료를 함유하는 가식성 제품의 정미 개량 방법, 및 고감미도 감미료의 정미가 개량된 가식성 제품은, 이성화당 및 희소당을, 이성화당 100 질량부에 대하여 희소당 1?150 질량부의 비율로 포함하는 것을 특징으로 한다.

Claims (12)
- 이성화당, 및 적어도 D-사이코스(psicose) 및/또는 D-알로오스를 포함하는 희소당을, 이성화당 100 질량부에 대하여 희소당 1?150 질량부의 비율로 포함하는, 고감미도 감미료에 대한 정미(呈味) 개량 조성물.
- 제1항에 있어서,
이성화당, 및 적어도 D-사이코스 및/또는 D-알로오스를 포함하는 희소당이, D-글루코오스, D-프럭토오스, 또는 이성화당 중 1종, 또는 2종 이상을 0.005 mol/l 이상의 알칼리에 의해 이성화함으로써 얻어지고, D-글루코오스 및 D-프럭토오스 이외의 당의 함유율이 60 질량% 미만이며, 적어도 D-사이코스와 D-알로오스를 함유하는 희소당 함유 이성화당인, 고감미도 감미료에 대한 정미 개량 조성물. - 제1항에 있어서,
고감미도 감미료가, 아스파테임(aspartame), 아세설팜 K(acesulfame potassium), 슈크랄로오스(등록상표), 스테비아 감미료, 사카린, 사카린산 나트륨, 감초 추출물로 이루어지는 군으로부터 선택되는 적어도 1종인, 고감미도 감미료에 대한 정미 개량 조성물. - 이성화당, 및 적어도 D-사이코스 및/또는 D-알로오스를 포함하는 희소당과 고감미도 감미료를, 이성화당 100 질량부에 대하여 희소당 1?150 질량부의 비율로 병용하는, 고감미도 감미료를 함유하는 가식성(可食性) 제품의 정미 개량 방법.
- 제4항에 있어서,
이성화당, 및 적어도 D-사이코스 및/또는 D-알로오스를 포함하는 희소당이, D-글루코오스, D-프럭토오스, 또는 이성화당 중 1종, 또는 2종 이상을 0.005 mol/l 이상의 알칼리에 의해 이성화함으로써 얻어지고, D-글루코오스 및 D-프럭토오스 이외의 당의 함유율이 60 질량% 미만이며, 적어도 D-사이코스와 D-알로오스를 함유하는 희소당 함유 이성화당인, 고감미도 감미료를 함유하는 가식성 제품의 정미 개량 방법. - 제4항에 있어서,
고감미도 감미료가, 아스파테임, 아세설팜 K, 슈크랄로오스(등록상표), 스테비아 감미료, 사카린, 사카린산 나트륨, 감초 추출물로 이루어지는 군으로부터 선택되는 적어도 1종인, 고감미도 감미료를 함유하는 가식성 제품의 정미 개량 방법. - 제4항에 있어서,
가식성 제품이, 탁상 감미료, 음료, 디저트, 및 냉과로 이루어지는 군으로부터 선택되는 것인, 고감미도 감미료를 함유하는 가식성 제품의 정미 개량 방법. - 이성화당, 및 적어도 D-사이코스 및/또는 D-알로오스를 포함하는 희소당과 고감미도 감미료를, 이성화당 100 질량부에 대하여 희소당 1?150 질량부의 비율로 함유하는, 고감미도 감미료의 정미가 개량된 가식성 제품.
- 제8항에 있어서,
