Abstract
본 발명은, 유청 단백질 용액을, 박막 난류유동 형태로 흐르는 유청 단백질 용액에, 접촉 혼합하여, 76 내지 120℃의 범위의 온도에서, 전단 속도 5,000s-1 내지 25,000s-1로 8분 내지 0.1초간 전단하는, 개질 유청 단백질의 제조 방법, 및 상기 방법에 의해 얻을 수 있는 개질 유청 단백질에 관한 것이다.

Claims (6)
2A) 유청 단백질 용액을, 박막 난류유동 형태로 흐르는 유청 단백질 용액에, 연속적으로 접촉 혼합하면서, 연속적으로 접촉 혼합되어 박막 난류유동 형태로 흐르는 유청 단백질 용액을, 76 내지 120℃의 범위의 온도에서, 전단 속도 5,000s-1 내지 25,000 s-1로 8분 내지 0.1초간 전단하는 공정
을 포함하는
유청 단백질을 개질하여 개질 유청 단백질을 제조하는 방법.
제1항에 있어서,
상기 접촉 혼합이,
상기 접촉 혼합이,
원통형 고정 교반조; 상기 원통형 고정 교반조 내 동심에 마련된 회전축; 및 상기 원통형 고정 교반조의 직경보다 약간 작은 직경을 가지며 회전축에 장착된 회전날개를 포함하고, 상기 회전 날개가, 원통체에 반경 방향의 작은 구멍을 다수 관통해 마련한 다공 원통부를 외주 측에 갖춘 장치를 사용하고,
다공 원통부 내부에 도입된 유청 단백질 용액을 다공 원통부의 작은 구멍을 통해서, 회전 날개의 고속 회전에 의해 고정 교반조와 다공 원통부의 사이를 박막 난류유동의 형태로 흐르는 유청 단백질 용액으로, 접촉 혼합시키는 것에 의해서 수행되는 것인 방법.
상기 전단이,
원통형 고정 교반조; 상기 원통형 고정 교반조 내 동심에 마련된 회전축; 및 상기 원통형 고정 교반조의 직경보다 약간 작은 직경을 가지며 회전축에 장착된 회전날개를 포함하고, 상기 회전 날개가, 원통체에 반경 방향의 작은 구멍을 다수 관통해 마련한 다공 원통부를 외주 측에 갖춘 장치를 사용하고,
회전 날개의 고속 회전에 의해, 유청 단백질 용액을, 회전 날개의 고속 회전에 의해 고정 교반조와 다공 원통부의 사이를 박막 난류유동의 형태로 흘리면서 전단하는 것에 의해서 수행되는 것인 방법.
상기 유청 단백질 용액이, 5 내지 18 질량%의 유청 단백질을 갖는 용액인 방법.
상기 개질된 유청 단백질은 비-개질된 유청단백질(즉, 본 발명의 방법에 의해 개질되지 않은 유청 단백질)에 비하여 가열 처리 후의 풍미 및/또는 외관이 유지 및/또는 향상된 유청 단백질인 방법.
