Claims (15)
- 하기 각 성분(건조 중량 기준)의 총량 10 내지 50 중량%와 수분 50 내지 90 중량%의 유화 혼합물의 겔상물로서, 상기 겔상물은 3.3 내지 4의 범위의 pH를 가지며, 동시에 단백질의 등전점 겔과 겔화제에 의한 열 용해성 겔과의 복합 겔로 형성되어 있는 것을 특징으로 하는 복합 영양 공급용 겔상 식품.
당질 30 내지 90 중량% 지질 5 내지 40 중량% 단백질 2 내지 60 중량% 유기산 0.2 내지 5 중량% 유기산 염 0.2 내지 5 중량% 유화제 0.2 내지 5 중량% 겔화제 0.2 내지 5 중량% - 제1항에 있어서, 하기 각 성분(건조 중량 기준)의 총량 10 내지 50 중량%와 수분 50 내지 90 중량%의 유화 혼합물의 가열 겔상물로서, 3.3 내지 4의 범위의 pH를 갖는 것을 특징으로 하는 겔상 식품.
당질 40 내지 80 중량% 지질 10 내지 30 중량% 단백질 10 내지 45 중량% 유기산 0.5 내지 3 중량% 유기산 염 0.5 내지 3 중량% 유화제 0.5 내지 3 중량% 겔화제 0.5 내지 3 중량% - 제1항에 있어서, 유화제가 펙틴 및 폴리글리세린지방산 에스테르로 이루어지는 군에서 선택되는 1종 이상의 것인 겔상 식품.
- 제1항에 있어서, 겔화제가 펙틴, 파셀레란, 카라게난, 한천, 로커스트 빈 검, 구아 검 및 아라비아 검으로 이루어지는 군에서 선택되는 1종 이상의 것인 겔상 식품.
- 제1항에 있어서, 종합 비타민류 및(또는) 미네랄류를 더 함유하는 겔상 식품.
- 제1항에 있어서, 연하 장해 환자용인 겔상 식품.
- 제1항에 있어서, 운동 선수의 운동시 영양 공급에 적합한 겔상 식품.
- 하기 각 성분(건조 중량 기준)의 총량 10 내지 50 중량%를 수분 50 내지 90 중량%와 함께 유화 혼합하고, 얻어진 유화액을 가열하여 겔화제를 열 용해시킴과 동시에 단백질을 등전점 침전시키는 것을 특징으로 하는 복합 영양 공급용 겔상 식품의 제조 방법.
당질 30 내지 90 중량% 지질 5 내지 40 중량% 단백질 2 내지 60 중량% 유기산 0.2 내지 5 중량% 유기산 염 0.2 내지 5 중량% 유화제 0.2 내지 5 중량% 겔화제 0.2 내지 5 중량% - 제8항에 있어서, 유화제가 펙틴 및 폴리글리세린지방산 에스테르로 이루어지는 군에서 선택되는 1종 이상의 것인 방법.
- 제8항에 있어서, 겔화제가 펙틴, 파셀레란, 카라게난, 한천, 로커스트 빈 검, 구아 검 및 아라비아 검으로 이루어지는 군에서 선택되는 1종 이상의 것인 방법.
- 제8항에 있어서, 유화 혼합이 종합 비타민류 및(또는) 미네랄류를 더 배합하여 수행되는 방법.
- 연하 장해 환자에게 영양 공급을 수행하기 위한 제1항에 따른 겔상 식품의 용도.
- 운동 선수의 운동시 영양 공급을 수행하기 위한 제1항에 따른 겔상 식품의 용도.
- 연하 장해 환자에게 제1항에 기재한 겔상 식품을 섭취시켜 영양 공급을 수행하는 방법.
- 운동 선수의 운동시 제1항에 기재한 겔상 식품을 섭취시켜 영양 공급을 수행하는 방법.
