Claims (5)
- 불린 쌀(100)과, 갯바위에서 채취된 배말(200)은 굵은 소금으로 씻어 충분히 헹군 후, 2시간 정도 바닷물과 같은 농도의 소금물에 다시 씻은 다음 뚜껑을 덮어 어둡게 하여 해감시킨 뒤 1~2분 정도 데친 다음 껍질을 분리시켜 찬물로 헹구고 체에 걸러내어 -7 ~ -5℃에서 저온냉동 보관하고, 톳(300)은 햇볕에서 자연 건조시켜 염분을 제거하기 위해 물에 불린 후 3시간 동안 삶아 햇볕에서 건조시킨 후 주재료로 사용할 경우 찬물에 담가서 불려주며, 상기 채취된 배말의 일부는 껍질을 제거하여 물로 세척한 후 체에 걸러낸 다음 찬물에 넣어서 배말 내장을 손으로 주물러 터트려서 배말내장추출물(400)을 제조하여 주재료를 준비하는 제1 단계(S100)와;
상기 갯바위의 주변 바다에서 채취된 생미역(500)의 부드러운 부위만 선별하여 물에 깨끗하게 씻은 다음, -7 ~ -5℃에서 저온냉동 보관하고, 서실(600)과 모자반(700)은 손질한 후, 끓는 물에 2~5sec 동안 살짝 데친 다음 식혀서 -7 ~ -5℃에서 저온냉동 보관하며, 풀가사리(800)는 손질한 후, 깨끗한 물에 씻은 다음 햇볕에서 자연 건조시켜 부재료로 사용할 경우 물에 적셔주는 부재료를 준비하는 제2 단계(S200)와;
상기 갯바위의 주변 바다에서 갓 채취된 멍게(900)를 찬물에 여러 번 헹궈서 모래와 이물질을 제거한 후, 멍게 내용물 중의 검은색 쓴맛 부분을 제거하고, 요오드와 타우린 성분의 과다 섭취로 인한 부작용을 없애기 위하여 손질된 멍게의 채 썰기를 실시하여 간장과 식초, 참기름, 버터 및 다진 마늘로 살짝 볶아주어 멍게 해산물을 준비하는 제3 단계(S300)와;
상기 주재료와 부재료의 간을 맞추고 바다 고유의 비린내를 잡음과 동시에 독특한 향과 맛을 내기 위하여, 진간장 2큰술과 잘게 썰은 쪽파 1대, 다진 양파 1/2큰술, 찧은 마늘 1/2큰술, 깨소금 1/2큰술, 고춧가루 1큰술, 물엿 1큰술, 참기름 1큰술, 사이다 1큰술, 고추장 1큰술로 이루어진 양념장(1000)을 준비하는 제4 단계(S400)와;
상기 불린 쌀(100) 223g를 압력솥에 투입시킨 다음, 상기 배말(200) 14g과 톳(300) 30g 및 상기 배말내장추출물(400) 175ml를 혼합시켜 100℃로 가열하여 혼합 밥을 제조하는 제5 단계(S500)와;
상기 제조된 혼합 밥 위에 상기 생미역(500) 50g과 서실(600) 46g, 모자반(700) 40g, 풀가사리(800) 30g으로 구성된 부재료를 모양과 맛을 더하기 위한 고명으로 얹는 제6 단계(S600)와;
상기 제6 단계의 고명 위에 상기 제3 단계에서 준비된 멍게(900)와 상기 제4 단계에서 준비된 양념장(1000)을 취식자의 기호에 따라 적정량으로 투입시키는 제7 단계(S700)가 포함되는 것을 특징으로 하는 배말내장추출물을 이용한 멍게해초비빔밥 제조방법. - 삭제
