Claims (23)
- 동물의 육류 품질 개선 방법으로서,
동물로부터 수득된 육류의 색의 발적(redness)을 증가시키는데 효과적인 양의 질산염 화합물을 동물에게 공급하는 단계를 포함하되,
동물에게 공급되는 질산염의 양이 일일 식이의 0.06 내지 0.5 wt%이고,
동물은 이유 후 단계, 성장 단계, 또는 마무리 단계에 있고;
상기 동물로부터 수득된 육류의 CIE L*a*b* 색상 측정의 a* 값이 질산염 화합물 없이 식이가 공급되는 음성 대조군 동물로부터 수득된 육류의 a* 값보다 더 크고, 상기 동물이 돼지인 방법. - 제 1 항에 있어서, 상기 동물로부터의 육류의 a* 값이 동물 도축 24 시간 후에 음성 대조군 동물로부터의 육류의 a* 값보다 30% 이상, 35% 이상 또는 40% 이상 더 큰 것인 방법.
- 제 1 항에 있어서, 상기 동물로부터의 육류의 a* 값이 동물의 도축 24시간 후에 9.8 이상인 방법.

동물에게 공급되는 질산염의 양이 일일 식이의 0.06 내지 0.5 wt%이고,
상기 동물로부터 수득된 육류의 색상의 발적은 유효량의 질산염없이 식이를 공급받은 대조군 동물로부터 얻은 육류의 색상의 발적보다 더 크고,
상기 육류의 발적이 CIE L*a*b* 색상 공간 방법에 따라 측정되고, 상기 동물로부터 수득된 육류의 상기 a* 매개변수가 유효량의 질산염을 포함하는 식이를 공급받지 않은 동물로부터 수득된 육류의 발적보다 30% 이상 더 크고,
상기 동물이 돼지인 방법. - 삭제
