Abstract
산화안정성이 향상되고, 풍미가 양호한 장쇄 다가 불포화 지방산 함유 유지를 얻을 수 있다. 따라서, 장기간에 걸쳐, 변취, 불쾌한 냄새나 건강에 유해한 작용을 하는 과산화물의 발생을 억제하고, 건강 우위성이 높은 장쇄 다가 불포화 지방산 함유 유지를 기존보다 저렴하게 제공할 수 있고, 비교적 적은 항산화물질을 첨가함으로써, 더욱 산화안정성을 향상시킬 수 있다.

Claims (14)
- 유지와 로즈마리의 접촉 처리 공정, 유지 및 로즈마리를 활성탄에 의한 흡착 처리에 제공하는 공정, 그 후 로즈마리를 여과에 의해 제거하는 공정, 및 여과 후에 감압 하에서 실시하는 수증기 탈취 공정을 포함하는, 수분 함유량이 3중량% 이하인, 장쇄 다가 불포화 지방산 함유 유지의 제조 방법으로서,
사용하는 로즈마리가, 꿀풀과(Lamiaceae) 만넨로우의 잎을, 건조하고 건조 후에 분쇄하여 얻어지는 로즈마리 파우더이며, 사용하는 활성탄이 약품 부활 처리된 활성탄이며, 수증기 탈취 공정에 있어서, 탈취 온도가 170℃ 이상 및 탈취 온도와 탈취 시간이 하기 수식을 충족하는, 장쇄 다가 불포화 지방산 함유 유지의 제조 방법.
(탈취 온도-170℃) × (탈취 온도-170℃) × 탈취 시간(분)/1000 = 50 이하. - 청구항 1의 기재에 있어서,
로즈마리에 의한 접촉 처리 공정이, 탈색 처리 공정 이전 혹은 탈색 처리 공정과 동시에 교반 접촉 처리되는 것으로써, 탈색 처리 공정 후에 여과 공정, 여과 공정 후에 감압 하에서 실시하는 수증기 탈취 공정을 포함하는, 장쇄 다가 불포화 지방산 함유 유지의 제조 방법. - 청구항 1의 기재에 있어서,
로즈마리에 의한 접촉 처리 공정에서 수증기 탈취 공정 종료까지, 유지 중의 수분 함유량 3중량% 이하를 유지하는, 장쇄 다가 불포화 지방산 함유 유지의 제조 방법. - 청구항 2의 기재에 있어서,
탈색 처리 공정에 있어서, 0.5중량% 이상의 로즈마리 및 1중량% 이상의 활성 백토를 첨가하여 처리하는, 장쇄 다가 불포화 지방산 함유 유지의 제조 방법. - 청구항 2의 기재에 있어서,
탈색 처리 공정에 있어서, 0.5중량% 이상의 로즈마리, 1중량% 이상의 활성 백토 및 1중량% 이상의 활성탄을 첨가하여 처리하는, 장쇄 다가 불포화 지방산 함유 유지의 제조 방법. - 청구항 1 내지 청구항 3의 어느 한 항의 기재에 있어서,
구성 지방산 조성 중의 이중 결합이 5개 이상의 장쇄 다가 불포화 지방산의 함유량이 20질량% 이상인, 장쇄 다가 불포화 지방산 함유 유지의 제조 방법. - 청구항 1의 기재에 있어서,
약품 부활 처리된 활성탄이 인산 부활 처리된 것인, 장쇄 다가 불포화 지방산 함유 유지의 제조 방법. - 청구항 2 또는 청구항 3의 기재에 있어서,
수증기 탈취 공정 후의 장쇄 다가 불포화 지방산 함유 유지를 이용한, 하기장쇄 다가 불포화 지방산 함유 유지의 보존 시험에서 얻어지는 과산화물가가 14meq/㎏ 이하인, 장쇄 다가 불포화 지방산 함유 유지의 제조 방법.
(장쇄 다가 불포화 지방산 함유 유지의 보존 시험 방법)
· 균일하게 혼합한 유지 50g을 100㎖ 유리병에 넣고 밀봉한다.
· 상기 유리병을, 40℃에서 14일간 보존한다.
· 14일간 보존 후에 과산화물가를 분석한다. - 삭제
