Claims (7)
- (a) 식용 가능한 쇠고기, 돼지고기, 닭고기, 오리 고기, 양고기, 생선 또는 떡갈비 중의 어느 하나로 마련된 제1 및 제2 성형육, 견과류 분말, 건조 과일류 분말, 씨앗류 분말, 건조 채소류 분말 또는 건조 해산물 분말 중의 적어도 어느 하나를 포함하는 제1 재료, 계란 액, 빵가루를 마련하는 단계,
(b) 상기 단계 (a)에서 형성된 제1 성형육을 소정 두께로 슬라이스 하여 연육하는 단계,
(c) 상기 단계 (b)에서 연육된 제1 성형육에 다수의 홈을 마련하는 단계,
(d) 상기 단계 (c)에서 마련된 다수의 홈에 제2 성형육을 충전하는 단계,
(e) 상기 단계 (d)에서 충전된 제2 성형육을 상기 제1 성형육으로 감싸는 단계,
(f) 상기 단계 (e)에서 상기 제2 성형육을 감싼 상기 제1 성형육을 계란 액으로 코팅하는 코팅 단계,
(g) 상기 단계 (f)에서 코팅된 계란 액 상에 빵가루를 도포하는 단계를 포함하고,
상기 단계 (a)에서 수용성 식이섬유 분말 및 불용성 식이섬유 분말을 포함하는 제2 재료가 더 마련하며,
상기 제2 성형육에는 상기 제1 재료 및 상기 제2 재료가 포함되고,
상기 수용성 식이섬유 분말과 불용성 식이섬유 분말은 중량비로서 4:1의 비율로 혼합하여 사용하며, 상기 제2 재료는 상기 제1 재료 100 중량부에 대해 3 내지 10 중량부가 포함되는 것을 특징으로 하는 혼합 성형육의 제조 방법. - 삭제
- 제1항에서,
상기 제1 성형육은 돼지의 로스 부위 또는 등심 부위 이고,
상기 제2 성형육은 쇠고기의 갈비살 또는 돼지고기의 갈비살에 양념을 부가하여 마련된 떡갈비인 것을 특징으로 하는 혼합 성형육의 제조 방법. - 제1항에서,
상기 혼합 성형육은 커틀릿 또는 패티인 것을 특징으로 하는 혼합 성형육의 제조 방법. - 제1항에서,
상기 견과류는 아몬드, 땅콩, 밤, 호두, 잣, 은행나무 열매, 피스타치오, 헤이즐럿, 캐슈넛, 피칸 중의 적어도 어느 하나를 포함하고,
상기 건조 과일류는 사과, 배, 귤, 오렌지, 딸기, 복숭아, 살구, 매실, 바나나 중의 적어도 어느 하나를 포함하고,
상기 씨앗류는 해바라기씨, 참깨씨, 들깨씨, 옥수수, 콩, 팥, 녹두 중의 적어도 어느 하나를 포함하고,
상기 건조 채소류는 배추, 양배추, 시금치, 쑥갓, 양파, 파, 아스파라거스, 죽순, 셀러리, 당근, 감자, 고구마, 호박, 오이, 토마토 중의 적어도 어느 하나를 포함하고,
상기 건조 해산물은 전복, 해삼, 새우, 홍합, 오징어, 낙지, 문어, 꽃게살, 바지락, 굴 중의 적어도 어느 하나를 포함하는 것을 특징으로 하는 혼합 성형육의 제조 방법. - 삭제
- 청구항 제1항, 제3항 내지 제5항 중의 어느 한 항의 혼합 성형육의 제조 방법에 의해 제조된 것을 특징으로 하는 혼합 성형육.
