Claims (6)
- 물, 요리당, 소금, 후추, 고추씨기름, 마늘, 레몬즙, 점성제를 배합하여 바베큐소스를 제조하는 단계;
숙성시킨 재료고기와 타 재료를 바베큐꼬챙이에 장착하는 단계;
상기 바베큐소스를 숙성시킨 재료고기 및 타 재료에 입히는 단계;
훈연하는 단계;를 포함하되,
숙성시킨 재료고기와 타 재료를 바베큐꼬챙이에 장착하는 단계에는,
손잡이와 손잡이로부터 돌출되며 길이방향으로 하나 이상의 소스홈이 형성된 꼬챙이부로 구성되는 바베큐꼬챙이를 상기 바베큐소스에 침지시켜 상기 소스홈에 바베큐소스가 스며든 상태로 숙성시킨 재료고기와 타 재료를 바베큐꼬챙이에 장착하는 것을 특징으로 하는 꼬치바베큐 제조방법.
- 제 1항에 있어서,
상기 바베큐소스는,
물 100중량부에 대해 요리당 80 내지 120중량부, 소금 5 내지 10중량부, 후추 1 내지 3중량부, 고추씨기름 3 내지 5중량부, 마늘 10 내지 20중량부, 레몬즙 10 내지 20중량부, 점성제 2 내지 5중량부를 배합하는 것을 특징으로 하는 꼬치바베큐 제조방법.
- 제 2항에 있어서,
상기 점성제는 해초분말 100중량부에 대해 감자전분 30 내지 50중량부로 배합되는 것을 특징으로 하는 꼬치바베큐 제조방법.
- 제 1항에 있어서,
상기 재료고기는,
재료고기를 물 100중량부에 대해 우술뿌리 5 내지 10중량부, 대추 1 내지 3중량부, 산야초효모액 2 내지 5중량부를 첨가하여 끓인 후에 우슬뿌리 및 대추를 걸러낸 추출수에 넣어 상온에서 12시간 동안 숙성시키는 것을 특징으로 하는 꼬치바베큐 제조방법.
- 삭제
- 제 1항에 있어서,
상기 소스홈은 개구부에서 하방향으로 직경이 확장된 형상의 요홈으로 구성됨을 특징으로 하는 꼬치바베큐 제조방법.
