Claims (11)
- 50 내지 70 브릭스(Brix)의 석류과즙을 희석하여 15 내지 25 브릭스(Brix)로 조절한 석류과즙 및 5 내지 20 브릭스(Brix)의 배 퓨레를 15 내지 25 브릭스(Brix)로 조절한 배 퓨레를 중량비가 1:9 내지 9:1의 비율로 혼합한 혼합액을 사카로마이세스 세레비제를 이용하여 20 내지 25 ℃에서 30 내지 50시간 동안 알코올 발효하는 것을 특징으로 하는 석류주의 제조방법.
- 제1항에 있어서,(a) 50 내지 70 브릭스(Brix)의 석류과즙을 희석하여 15 내지 25 브릭스(Brix)로 조절한 석류 과즙과 5 내지 20 브릭스(Brix)의 배 퓨레를 15 내지 25 브릭스(Brix)로 조절한 배 퓨레를 중량비가 1:9 내지 9:1의 비율로 혼합하는 단계;(b) 상기 (a) 단계의 혼합물을 1 내지 20 중량%를 분리하여 사카로마이세스 세레비제로 발효시켜 밑술을 제조하는 단계;(c) 상기 (b) 단계에서 제조된 밑술을 상기 (b) 단계에서 분리되고 남은 (a) 단계의 혼합물의 잔량에 첨가하여 추가로 발효시키는 단계; 및(d) 상기 (c) 단계의 발효액을 여과하는 단계를 포함하는 것을 특징으로 하는 석류주의 제조방법.
- 제2항에 있어서, 상기 석류 과즙 및 배 퓨레는 당도가 21 내지 23 브릭스(Brix)로 조절된 것임을 특징으로 하는 석류주의 제조방법.
- 제2항에 있어서, 상기 (a)단계의 혼합은 석류 과즙과 배 퓨레의 중량비가 2:8 내지 8:2의 비율로 혼합하는 것을 특징으로 하는 석류주의 제조방법.
- 제2항에 있어서, 상기 발효 효모는 사카로마이세스 세레비제 T084(KFCC-11373P)인 것을 특징으로 하는 석류주의 제조방법.
- 제2항에 있어서, 상기 (a)단계의 혼합액에 0.01 내지 1 중량%의 무기염류를 첨가하는 단계를 추가로 포함하는 것을 특징으로 하는 석류주의 제조방법.
- 제2항에 있어서,(e) 상기 (d) 단계의 여과액에 물 또는 주정을 첨가하는 단계; 및(f) 상기 (e) 단계의 첨가액에 당 또는 탄산을 첨가하는 단계를 추가로 포함하는 것을 특징으로 하는 석류주의 제조방법.
- 제7항에 있어서, 상기 (e) 단계의 물 또는 주정의 첨가는 최종 알코올 농도가 2 내지 20 중량%가 되도록 첨가하는 것임을 특징으로 하는 석류주의 제조방법.
- 제7항에 있어서, 상기 (f) 단계의 당의 첨가는 고과당, 스테비오사이드, 포도당, 설탕, 말토덱스트린 및 구연산으로 이루어진 군에서 선택된 당류를 전체 주류 중량의 2 내지 30 중량%으로 첨가하는 것임을 특징으로 하는 석류주의 제조방법.
- 제7항에 있어서, 상기 (f) 단계의 탄산의 첨가는 탄산 농도를 1.0 내지 4.0 부피%가 되도록 첨가하는 것임을 특징으로 하는 석류주의 제조방법.
- 제1항 내지 제10항중 어느 한 항의 제조방법에 의해 제조된 석류주.
