Claims (3)
- 메주를 발효시키는 메주발효단계;
상기 메주발효단계를 통해 발효된 메주를 소금물에 넣고 30 내지 40일 동안 숙성시키는 제1숙성단계;
상기 제1숙성단계를 거쳐 제조된 장으로부터 간장을 분리하고, 간장이 분리된 장에 오디추출물을 혼합하는 오디추출물혼합단계; 및
상기 오디추출물혼합단계를 통해 오디추출물이 혼합된 장을 장독에 투입하고 숙성시키는 제2숙성단계;로 이루어지며,
상기 오디추출물은 오디분말을 메탄올에 첨가하여 오디에 함유된 유효성분을 추출하는 추출단계;
상기 추출단계를 통해 추출된 추출물을 여과하는 여과단계;
상기 여과단계를 통해 여과된 추출물을 감압농축하는 감압농축단계; 및
상기 감압농축단계를 거쳐 추출된 추출물을 동결건조하는 동결건조단계;를 통해 제조되는 것을 특징으로 하는 오디추출물이 함유된 발효된장의 제조방법.
- 청구항 1에 있어서,
상기 추출단계는 오디분말 100 중량부에 메탄올 900 내지 1100 중량부를 투입하여 이루어지며, 상기 감압농축단계는 700mHg의 압력과 영하 40℃의 온도에서 이루어지며, 상기 동결건조단계는 상기 추출물을 영하 40℃에서 건조시켜, 함수율을 5% 미만으로 조절하여 이루어지는 것을 특징으로 하는 오디추출물이 함유된 발효된장의 제조방법.
- 청구항 1에 있어서,
상기 소금물은 정제수 100 중량부에 천일염 20 내지 30 중량부를 혼합하여 이루어지며, 상기 오디추출물혼합단계는 상기 제1숙성단계를 거쳐 제조된 장으로부터 간장을 분리하고, 간장이 분리된 장 100 중량부에 오디추출물 5 내지 10 중량부를 혼합하여 이루어지는 것을 특징으로 하는 오디추출물이 함유된 발효된장의 제조방법.
