Abstract
본 발명에 따르면, 그 자체로서 기능성 식이섬유물질을 함유한 알긴산 비드를 함유할 뿐만 아니라, 육안으로 보여지는 비드안에 기능성 물질을 포함시킴으로써 소비자의 시각적인 만족뿐만 아니라 영양적인 만족을 동시에 제공하고, 이로 인해 유제품의 섭취를 권장하는 어린이와 노인, 그리고 패션음료를 선호하는 젊은층에게 균형잡힌 영양을 제공하며, 특히 최근 늘고 있는 유아비만에 대한 예방에 기여하도록 하고, 유제품의 소비를 촉진하여 축산농가의 수익성과 국민건강을 증진시킬 수 있고, 유제품이 가진 단점인 식이섬유 함량의 부족을 근본적으로 해결하도록 함으로써 유제품의 기능성 및 영양성을 극대화시킬 수 있다.
Description
Claims (4)
- 유제품에 중량 대비 1~10% 알긴산 비드를 함유하는 조성물로 이루어지고,
상기 알긴산 비드는,
비타민C, 비타민E, 철분, 오메가3, 수용성 식이섬유 중에서 어느 하나 또는 이들의 조합을 포함하는 기능성 물질 0.5~15.0중량%, 정백당 25.0~45.0중량%, 알긴산나트륨 0.5~2.0중량%, 자몽종자추출액 0.001~0.1중량%, 천연색소 0.5~1.5중량%, 정제수 37.0~60.0중량%를 포함한 혼합액을 1.0~5.0% 젖산칼슘용액에 적하성형하여 형성되는 것을 특징으로 하는 기능성 알긴산 비드를 함유한 유제품.
- 제 1 항에 있어서, 상기 유제품은,
우유, 발효유, 아이스크림, 치즈, 버터 중 어느 하나로 이루어지는 것을 특징으로 하는 기능성 알긴산 비드를 함유한 유제품.
- 제 1 항에 있어서, 상기 알긴산 비드는,
입자의 크기가 1.0~10.0mm에 해당하는 것을 특징으로 하는 기능성 알긴산 비드를 함유한 유제품.
- 비타민C, 비타민E, 철분, 오메가3, 수용성 식이섬유 중에서 어느 하나 또는 이들의 조합을 포함하는 기능성 물질 0.5~15.0중량%, 정백당 25.0~45.0중량%, 알긴산나트륨 0.5~2.0중량%, 자몽종자추출액 0.001~0.1중량%, 천연색소 0.5~1.5중량%, 정제수 37.0~60.0중량%를 포함한 혼합액을 85~90℃로 30~40분 동안 가열한 후, 1.0~5.0% 젖산칼슘용액에 적하성형하여 입자의 크기가 1.0~10.0mm에 해당하는 알긴산 비드를 제조하는 단계;
상기 알긴산 비드를 살균 처리하는 단계; 및
상기 살균처리된 알긴산 비드를 유제품에 중량 대비 1~10% 혼입하는 단계
를 포함하는 것을 특징으로 하는 기능성 알긴산 비드를 함유한 유제품의 제조방법.
