Claims (3)
- a) 딸기, 복분자 및 오미자로 이루어진 원료를 마쇄하고, 착즙한 후 이를 멸균하는 원료 처리 단계;b) 별도로, 상기 혼합 과즙의 당도를 약 12 Brix°로 보당하고, 이를 2% 아가로오스 겔을 첨가한 배지에 효모 접종원을 접종하여 25~35℃의 온도에서 2~3일간 배양시켜 효모를 활성화시키는 접종원 배양 단계;c) 상기 활성화된 효모를 당도 12 Brix°로 조정하고 상기 멸균시킨 혼합 과즙에서 25~35℃에서 2~3일간 배양하는 주모를 제조하는 단계;d) 상기 혼합 과즙을 용기에 채우고, 당도를 13~17 Brix°로 보당하고, 여기에 아황산염 100~200 ppm, 및 상기 주모 3~7%를 첨가하는 효모 및 아황산염 첨가 단계;e) 상기 혼합물을 간헐적 교반하에 5~6℃에서 30일 내지 60일 동안 알코올 발효시키는 단계;f) 주발효가 종료된 술덧에서 과피, 종자를 포함하는 박을 압착기로 압착하는 단계;g) 분리된 액은 밀폐된 병에 가득 채우고 발효전을 달아 10-20℃의 냉암소에서 2~4개월간 발효시키는 후발효 단계;h) 상기 후발효 동안 발생하한 침전물을 원심분리 또는 앙금질을 통하여 제거하는 앙금질 단계; 및i) 조미 및 살균 포장 단계를 포함하는 것을 특징으로 하는 딸기를 이용한 주류의 제조 방법.
- 제1항에 있어서, 상기 a)단계에서 착즙 및 발효 수율을 높이기 위하여 효소를 2000 ppm 이하로 첨가하는 것인 방법.
- 제1항에 있어서, 상기 a)단계에서 탄산가스를 2~3 kg/㎠의 농도로 첨가하는 것인 방법.
