- 찹쌀: 엿기름: 무: 배(또는 사과): 물: 생강: 고춧가루: 설탕을 중량비를 기준으로 각각 80: 50: 70: 30: 500: 8: 4: 5 로 하는 식혜의 제조 방법에 있어서, 식혜밥, 생강즙 및 고춧가루 추출물을 혼합하고, 여기에 엿기름, 물 및 설탕을 넣은 혼합물에 L-bulgaricus 0.5%(V/V)와 S-cerevisiae 0.5%(V/V)를 첨가하여 40℃에서 4시간 당화시킨 후, 잘게 썬 무와 배(또는 사과)를 섞어 4℃∼5℃ 로 보관하여 제조되는 유산균 식혜의 제조 방법
