Claims (13)
- 식용 지방, 친수성 필름 형성 물질, 탄수화물 및 물을 함유하는 수성 분산액을 유화시켜 상기 필름 형성 물질에 의해 캡슐화되는 지방구를 함유하는 안정한 액성 에멀션 농축액을 형성하고, 상기 액성 에멀션 농축액에 친수성 필름 형성 물질을 수성 분산액 내에 함유된 것과 실질상 동량으로 첨가하고, 및 상기 에멀션 농축액을 건조시켜 건성 지방 에멀션 생성물을 제공함을 특징으로 하는, 산화에 대해 장기간 안정성을 갖는 건성 지방 에멀션 생성물의 제조방법.
- 제1항에 있어서, 수성 분산액 내에 포함된 필름 형성물질의 양이 지방구 캡슐화 연속 필름을 제공하기에 충분한 방법.
- 제1항에 있어서, 수성 분산액이 1 : 1∼20 : 1사이의 범위의 지방 : 필름 형성 물질의 비를 갖는 방법.
- 제1항에 있어서, 지방이 수성 분산액의 고형분의 주성분을 함유하는 방법.
- 제1항에 있어서, 필름 형성 물질이 단백질성 친수성 콜로이드, 히드로콜로이드 고무, 젤라틴화 전분, 덱스트린 및 화학적으로 변형된 덱스트린화 전분으로 이루어진 군중에서 선택된 것인 방법.
- 제1항에 있어서, 액성 에멀션 농축액에 첨가되는 필름 형성 물질이 수성 분산액 내에 포함된 필름 형성 물질과 동일한 것인 방법.
- 제1항에 있어서, 액성 에멀션 농축액에 첨가되는 필름 형성 물질이 수성 분산액 내에 포함된 필름 형성 물질과 상이한 것인 방법.
- 제5항에 있어서, 필름 형성 물질이 카제인산염, 아라비아고무, 화학적으로 변형된 덱스트린화 전분 및 그의 조합으로 이루어진 군중에서 선택된 것인 방법.
- 제8항에 있어서, 필름 형성 물질이 카제인산 나트륨이고, 수성 분산액 내에서 5 : 1∼15 : 1의 지방 : 카제인산 나트륨의 비로 존재하는 방법.
- 제1항에 있어서, 탄수화물이 수성 분산액의 고형분의 3∼35중량%의 양으로 존재하는 이당류인 방법.
- 제1항에 있어서, 액성 에멀션 농축액에서 지방구가 10미크론 미만의 평균 입자 크기를 갖는 방법.
- 제1항에 있어서, 액성 에멀션 농축액이 25∼75중량%의 고형분을 갖는 방법.
- 제1항에 있어서, 수성 분산액이 유화제를 함유하는 방법.
