Abstract

PURPOSE:To improve the yield of safflower red pigment and to enable industrial mass-production of the red pigment, by culturing cell group of safflower in a liquid medium containing a safflower red pigment precursor. CONSTITUTION:A safflower red pigment can be produced in high yield by culturing safflower cell in a liquid medium in the presence of a safflower red pigment precursor. Preferably, the culture of the cell group of safflower is carried out in a liquid medium devoid of ammonium ion and/or calcium ion and/or magnesium ion and added with D- and/or DL-aromatic amino acid or a component containing the amino acid. The safflower red pigment precursor is preferably the one produced by adding water to an organic solvent extraction liquid of yellow petal of safflower and removing the organic solvent by vacuum distillation.
