Abstract
PURPOSE: To obtain flour giving cakes less liable to sink after baking, pleasant to the palate and having large volume by treating the surface of flour with a specified small amt. of triglyceride based on satd. triglyceride. CONSTITUTION: The surface of flour, preferably soft flour is treated with 0.02-1.0wt.%, preferably 0.03-0.1wt.% triglyceride based on the amt. of the flour. The triglyceride contains >=80% satd. triglyceride in which each fatty acid preferably has >=16 C atoms.
