Abstract
PURPOSE:To obtain smoked food having excellent shelf stability, a taste of characteristic smoking and good appearance, by packing food into a film consisting of a thermoplastic polymer mixture having excellent gas barrier properties and smoking the food at a specific temperature and at a specific humidity. CONSTITUTION:A raw material such as fish meat, ham or sausage is packed into a food packing film having at least one thermoplastic polymer layer which consists of a mixture of 45-90wt.% polyamide and 10-55wt.% alpha-olefin-vinyl alcohol copolymer, has >=200g/m<2>.day.atm permeability of 50% methanol at 60 deg.C at 0% RH, <=50cc/m<2>.day.atm of oxygen permeability at 30 deg.C at 60% RH and about 15-100mum thickness, fastened and smoked at 90-95 deg.C average temperature in a smoking chamber at 80-100% RH average humidity for 5-90 minutes.
