Abstract
PURPOSE: Krill meat together with addivitives such as flavors is ground into paste and subjected to two-stage heating to produce crab meat-like food closely resembling commercially available canned crab.
CONSTITUTION: Krill meat is roughly ground and salt groud together with table salt, starch and seasonings into paste. Then, the resultant krill paste is extruded into strings under drawing onto a hot plate at 70W110°C or extruded into a band under drawing, heated at the above temperature, then split into strings. The fibrous product is bound with a starch or protein glue, colored with a naturally occurring red pigment and cut in a length of crab's leg. And the product is canned along with a sodium chloride solution and subjected to retort sterilization at 110W120°C.
