Abstract
PURPOSE: To obtain a nice and nontoxic health food capable of eliminating the pain without side effects, by combining marine fish products inoculated with repeatedly fermented microorganisms with an UME.
CONSTITUTION: Marine fish products inoculated with repeatedly fermented e.g. pieces of dried bonito inoculated with microorganisms, are combined with an UME to give the aimed food. For example, the pieces of dried bonito inoculated with the microorganisms are steamed, powdered, then mixed with an Ume extract, an UME flesh extract or UME flesh and powdered or formed into a powdery of granular confection. The pieces of the steamed dried bonito inoculated with the microorganisms are powdered and kneaded with an UME jam prepared from an UME flesh to give a synthetic jam. Alternatively, the pieces of the steamed dried bonito inoculated with the microorganisms are powdered and immersed in an UME juice prepared from an unripe UME to give an extract juice.
