Abstract

PURPOSE: To prepare stable low-calorie margarine, by adding glycerol or sorbitan ester of a fatty acid, e.g., erucic acid, as an emulsifying agent in continuous emulsification.
CONSTITUTION: In the preparation of low-calorie margarine comprising about 35W 50wt% of fats and oils, 0.2W1.0wt% of glycolrol and/or sorbitan ester of a fatty acid, e.g., erucic acid is added as emulsifying agent and emulsification is carried out by using a continuous emulsifier capable of lending an oily with an aqueous layers and emulsifying them in a circulation number of not less than 60 times. For example, water and oil are fed continuously from the inlet 1 and the inlet 2 respectively by a constant delivery pump or a variable delivery pump to the continuous emulsifier shown the figure, emulsified in the container 6 by the revolution of the turbine 4 in the arrow direction, and resulting emulsified solution is taken out from the outlet 3.
