Abstract

PURPOSE: The light fastness of anthocyanin pigments are improved by contacting the anthocyanin pigments with a phenolic compound.
CONSTITUTION: Anthocyanin pigments such as enocyanin, purple corn or hibiscus pigment is brought into contact with at least one selected from the group consisting of gallic acid, its dimer, tannic acid and rutin, preferably in an aqueous medium under acidic conditions.
