Abstract
PURPOSE: To shorten the thawing time and improve the freshness retaining of a frozen fish, by using a loosening agent for the frozen fish containing a specific wt% or more ethyl alcohol.
CONSTITUTION: A loosening agent for a frozen fish containing ethyl alcohol alone or 50wt% or more ethyl alcohol, and 10W40wt% one type selected from propylene glycol, glycerol, sorbitol, isomerized sugar, fructose, glucose and sugar and 2W 10wt% common salt as other components is diluted with water to a concentration of 2W15wt%, preferably 3W10wt%. A fish body is immersed in the resultant solution and then frozen.
