Abstract
PURPOSE: To remove the astringency of persimmon and keep the freshness for a long period, by sealing persimmons and an alkali or alkaline earth metal oxide or hydroxide in a gas barrier packaging material or in a sealable container.
CONSTITUTION: One or two compounds selected from alkali metal hydroxides such as sodium hydroxide and potassium hydroxide, alkaline earth metal oxides such as calcium oxide and barium oxide, alkaline earth metal hydroxides such as calcium hydroxide and barium hydroxide, etc. are put in a breathable bag. The bag is sealed together with persimmons in a gas barrier packaging material or in a sealable container. The amount of the oxide or hydroxide is about ≥0.005 alkali equivalent per 1kg of persimmon. The gas barrier packaging material has an oxygen permeability of ≤500cc/m2.24hr.atm, and pref. is moistureproof cellophane, vinylidene chloride, vinylon, aluminum foil, etc. The persimmons can be sweetened and stored for a long period by this process.
