Abstract
PURPOSE: To prepare a low-salt pickled "ume" having unique taste and flavor, by using sugar, sweet "sake" and vinegar, and a considerably reduced amount of salt.
CONSTITUTION: After removal of harsh taste, 1kg of "ume" fruits, and if necessary, a proper amount of "ume" flowers at the flowering time or "ume" leaves, are pickled in a medium composed of about 100g of salt, about 100g of sugar, about 400W500cc of vinegar, about 200cc of sweet "sake", and if necessary, a small amount of low calorific sweetener such as maltitol and xylitol.
