Abstract
PURPOSE: To easily quantitize the (CH3)3N, which is generated in accordance with the putrefaction of fish meat, by fixing special oxidizing and reducing enzyme or an auxiliary enzyme on to in the vicinity of an electric collector, respectively.
CONSTITUTION: As a trimethyl amine oxide reducing enzyme and an auxiliary enzyme, oxidized type nicotinamide adenine dinucleotide NAD is dissolved in a phosphoric acid of pH 7.0. The solution thus prepared is applied to a disk, which is press-molded of graphite powders, and driyed so that it is acted with flutaraldehyde. The graphite disk 4, on the surface of which the enzyme and auxiliary enzyme are bridged, is fixed to a substrate 1 by a screwing member 5, which is made of an insulating material, such that it is in contact with a Pt plate 3 having a lead wire 2 connected therewith. In case there exists (SH3)3N, the catalyzer reaction of the enzymes in the opposite direction to that shown so that the NADH made of NAD+ is oxidized electro-chemically on the disk 4 by the NAD+ and so that the concentration of the (CH3)N can be obtained from the value of the oxidizing current.
