Abstract

PURPOSE:To obtain a filter holding the degree of freshness of fresh meat and the fishery products by providing many small holes on a film sheet which is insoluble in water and anticorrosive. CONSTITUTION:A filter is obtained by providing many small holes 2 on a film sheet 1 which is insoluble in water and anticorrosive. This filter is spread on a tray 3 for dishing the fresh fishery products and utilized. Thereby the water absorbed through the small holes 2 is completely separated from the fresh substances and stored 4 while keeping the filter as a boundary by both water absorptive capacity and water-holding effect of capillarity caused in the gaps between the film sheet 1 and the tray 3. Further an attractable water-holding material (nonwoven fabric) is spread on the tray and utilized for the fresh substances plenty in secretion quantity and thereby large quantities of water are attracted and stable water storage is enabled. Therefore the fresh substances are not immersed in the gravy thereof and are sanitary.

DETAILED DESCRIPTION OF THE INVENTION The present invention relates to maintaining the freshness of fresh meat, fish and shellfish, etc.

Conventionally, when selling fresh fish and shellfish sashimi and meat fillets at stores such as supermarkets that handle fresh produce, they are sold on trays, but after a certain period of time, water such as meat juice flows out and accumulates at the bottom.

This is an unavoidable condition when using refrigerators and freezers to maintain the freshness of perishables. The low temperature of the stored perishables balances the high temperature of the outside air, so the humidity in the air keeps the perishables fresh. Water droplets adhere to objects. This adhering moisture and internally secreted meat juices are perfect nutrients for bacteria, which can multiply in a short period of time and cause spoilage and food poisoning.

Furthermore, for consumers, even if fresh food is beautifully arranged on a tray, if the meat juices have accumulated at the bottom, they will lose their desire to purchase the product.
This is extremely disturbing for consumers and sellers. In order to prevent this drawback, efforts are being made day and night to research under the guidance of public health centers, but there is no particular preventive measure; instead, a piece of non-woven fabric is placed on the bottom to utilize the suction and water retention properties of the capillary phenomenon. This is not done from a hygienic point of view, but for sales promotion purposes, merely for aesthetic purposes, and instead allows the meat juices to accumulate evenly on the surface of the non-woven fabric. As a result, the fresh food is soaked in the meat juices, which absorbs moisture and reduces flavor and freshness. If the water retention capacity is exceeded, the meat juices will flow out again and accumulate at the bottom.

接するので解決策はない。
No matter how many layers of non-woven fabric are used, there is no solution since the meat juices will come into direct contact with the perishables.

For fresh produce that secretes a large amount, a suction water-retaining material (non-woven fabric) can be placed on the tray to absorb a large amount of water and provide stable water storage. In this way, the purpose is achieved by completely separating and storing the meat juice secreted from perishables.

[Example 1] A 16 crn x 7 cm filter was placed on a tray,
When water was sucked in, 1.5 cc of water was absorbed and a stable water storage state was created. Also, the amount of suction when stacking two layers was 3 cc, and the amount of suction when stacking three layers was 4.5 cc, allowing water to be stored in a stable state.
