Abstract
【解決手段】原料となるこんにゃく芋由来のこんにゃく粉を分解した後に、できたマンノース及び/またはマンノオリゴ糖を含む組成物を、105℃以上で加熱処理することにより機能性組成物中の二酸化硫黄濃度が低減できる。二酸化硫黄(亜硫酸)が低減された機能性組成物は、法規上問題なく、飲食品として流通させることが可能となる。

Description
(1)こんにゃく粉由来のマンノース及び/またはマンノオリゴ糖を含有し、二酸化硫黄の含有量が乾燥重量あたり0.03g/kg以下であるこんにゃく粉の酵素分解物。
(2)グルコマンナンの酵素分解処理が完了した後に、105℃以上で加熱処理することを特徴とする(1)に記載のこんにゃく粉の酵素分解物の製造方法。
(3)(1)に記載のこんにゃく粉の酵素分解物を含む、飲食品。
本発明のこんにゃく粉とは、こんにゃく芋から火力乾燥を用いて製造した加工品であればその形態についてはどんなものでも構わない。一般的には、こんにゃく芋の加工品である荒粉、精粉、飛粉などグルコマンナンを含む粉を用いることが好ましい。これらこんにゃく粉そのままを用いても良いし、さらに精製したこんにゃく粉を用いても良い。また、それらの混合物を用いても良い。さらに精製したものとは、アルコールもしくは含水アルコールを用いて不純物を除去したこんにゃく粉や、焙煎などをして臭いを除去精製したこんにゃく粉などグルコマンナンの純度を向上させたものであれば特に限定されない。
(1)標準物質
マンノース(SERVA社製 商品名「D-Mannose research grade」)、β-1,4-マンノビオース(メガザイム社製)
(2) 分析方法(以下2法から適時選択)
(A)高速液体クロマトグラフィー法1
分析用カラム:アミネックスHPX-87H(バイオラッド社製)
カラム温度:50℃、移動相:0.005M硫酸、流速:0.6mL/min、検出:示差屈折計
(B)高速液体クロマトグラフィー法2
分析用カラム:アミネックスHPX-87P(バイオラッド社製)
カラム温度:50℃、移動相:水、流速:0.6mL/min、検出:示差屈折計
亜硫酸定量装置AR-10(宮本理研工業社製)を用いて、アルカリ滴定法で二酸化硫黄を分析する。50mLコニカルチューブに0.3%過酸化水素溶液10mLを入れ、メチルレッド・メチレンブルー試液3滴を加える。次に、0.01mol/L水酸化ナトリウム溶液0.01mLを加え装置に取り付けた。100mL丸底フラスコに試料を精密に量って加え、ミリQ水20mL、エタノール2mL、シリコーン樹脂2滴、25%リン酸10mLを加え装置に取り付けた。窒素ガスを0.55L/分の速度で通気しながら、ミクロガスバーナーの炎の高さは5cmとし丸底フラスコを10分間加熱後に、コニカルチューブを取り外し、試験溶液とした。可変式連続分注器8100(ニチリョー製)を用いて0.01mol/L水酸化ナトリウム溶液で液が緑色になるのを終点として滴定し、次式によって試料中の二酸化硫黄含量(g/kg)を計算した。

Claims (3)
- こんにゃく粉由来のマンノース及び/またはマンノオリゴ糖を含有し、二酸化硫黄の含有量が乾燥重量あたり0.03g/kg以下であるこんにゃく粉の酵素分解物。
- グルコマンナンの酵素分解処理が完了した後に、105℃以上で加熱処理することを特徴とする請求項1に記載のこんにゃく粉の酵素分解物の製造方法。
- 請求項1に記載のこんにゃく粉の酵素分解物を含む、飲食品。
