質吸水性材料を吸水させた状態で収容しうると共に、内部に温度計を挿入するための挿入口が設けられている容器とを備えたことを特徴とする。

本実施形態に係る加熱処理評価用の模擬検体1は、実際の製品としていわゆるレトルトパウチ食品を想定した模擬検体であり、図1〜3に示すように、柔軟性のある多孔質吸水性材料2と、該多孔質吸水性材料2を吸水させた状態で密封収容する容器3とを備えて構成されている。

- 柔軟性のある多孔質吸水性材料と、該多孔質吸水性材料を吸水させた状態で収容しうると共に、内部に温度計を挿入するための挿入口が設けられている容器とを備えたことを特徴とする加熱処理評価用の模擬検体。
- 前記多孔質吸水性材料が、スポンジであることを特徴とする請求項1記載の加熱処理評価用の模擬検体。
- さらに、熱の影響により変質する成分を備えていることを特徴とする請求項1又は2記載の加熱処理評価用の模擬検体。
- 水を吸収した柔軟性のある多孔質吸水性材料を容器内に収容して模擬検体を作成するステップと、
該模擬検体の内部温度を計測しながら該模擬検体を加熱処理するステップと、
を含むことを特徴とする模擬検体を用いた加熱処理評価方法。 - 水および加熱により変質する成分を吸収した柔軟性のある多孔質吸水性材料を容器内に収容して模擬検体を作成するステップと、
該模擬検体の内部温度を計測しながら該模擬検体を加熱処理するステップと、
加熱処理の前後において前記加熱により変質する成分の変化量を測定するステップと
を含むことを特徴とする模擬検体を用いた加熱処理評価方法。 - 水を吸収した柔軟性のある多孔質吸水性材料に、加熱により変質する成分が収容された小容器が埋設され、該多孔質吸水性材料が容器内に収容された模擬検体を作成するステップと、
該模擬検体を加熱処理するステップと、
加熱処理の前後において前記加熱により変質する成分の変化量を測定するステップと、
を含むことを特徴とする模擬検体を用いた加熱処理評価方法。 - 前記多孔質吸水性材料がスポンジであることを特徴とする請求項4〜6の何れかに記載の模擬検体を用いた加熱処理評価方法。
