Claims (16)
- 飲料中のタンパク質を変性する方法において、
タンパク質を含む飲料内容物を混合して、飲料を形成する工程、
熱交換器内で前記飲料を加熱する工程、
前記飲料を前記熱交換器の外部にある保持ループに移動する工程、および
前記飲料が前記熱交換器内で加熱された後に、該熱交換器の詰まりを防ぐために該熱交換器の外部で変性が行われるように、ある滞留時間に亘り前記保持ループ内で前記タンパク質を変性する工程、
を有してなり、
前記飲料を前記保持ループに移動する前に、該飲料を、180°Fから210°F(約82℃から99℃)の範囲に前記熱交換器内で加熱し、
前記保持ループ内の前記飲料に追加の加熱が行われないようにする方法。 - 前記保持ループがステンレス鋼製管である、請求項1記載の方法。
- 前記保持ループ中の滞留時間が30から180秒間の範囲にある、請求項1または2記載の方法。
- 前記飲料が、3%から8%のホエータンパク質を含む果汁スムージーを含む、請求項1から3いずれか1項記載の方法。
- 前記保持ループが、他の飲料の処理中に迂回されるように構成されている、請求項1から4いずれか1項記載の方法。
- 前記飲料を前記熱交換器および前記保持ループに送るために、取り外し可能な管を含むスイングパネルを用いる、請求項1から5いずれか1項記載の方法。
- 前記飲料を第2の保持ループおよび第3の保持ループに通過させる、請求項1から6いずれか1項記載の方法。
- 前記飲料をホモジナイザに通過させる、請求項1から7いずれか1項記載の方法。
- 飲料混合物中のタンパク質を変性する方法において、
タンパク質を含む飲料混合物を形成する工程、
前記飲料混合物を加熱する工程、
前記飲料混合物を加熱した後、該飲料混合物を保持ループに移動する工程、および
前記飲料混合物が加熱された後に、ある滞留時間に亘り前記保持ループ内で前記タンパク質を変性する工程、
を有してなり、
前記飲料混合物を前記保持ループに移動する前に、該飲料混合物を、180°Fから210°F(約82℃から99℃)の範囲に加熱し、
前記保持ループ内の前記飲料混合物に追加の加熱が行われないようにする方法。 - 前記保持ループがステンレス鋼製管である、請求項9記載の方法。
- 前記保持ループ中の滞留時間が30から180秒間の範囲にある、請求項9または10記載の方法。
- 前記飲料混合物が、3%から8%のホエータンパク質を含む果汁スムージーを含む、請求項9から11いずれか1項記載の方法。
- 取り外し可能な管を含むスイングパネルが前記飲料混合物を前記保持ループに送る、請求項9から12いずれか1項記載の方法。
- 前記飲料混合物を第2の保持ループおよび第3の保持ループに通過させる、請求項9から13いずれか1項記載の方法。
- 前記飲料混合物をホモジナイザに通過させる、請求項9から14いずれか1項記載の方法。
