Description
表1に示す飼料配合例の飼料を用いて、ブリを2か月飼育し、これを水揚げした後、3.5℃で冷蔵した。9時間後にフィレーとして4℃で貯蔵した後、24時間後に切り身とし、デジタルカメラにて撮影した(0時間)。更に、4℃貯蔵中における切り身の写真を24及び48時間後に撮影した。得られた画像の血合肉部分についてImage JによってLab変換し、変色の指標としてb値(緑色)のa値(赤色)による商b/a値を用いて貯蔵中におけるブリ血合肉の変色を評価した。
本試験において、ブリ切り身の貯蔵中における変色の推移を、デジタルカメラにより撮影した結果を、図1に示した。図1において、A:対照飼料;B:アスタキサンチン含有飼料;C:アスタキサンチン+γ−オリザノール含有飼料によって飼育したものをそれぞれ示す。図1に示すように、対照区Aに比べてアスタキサンチン含有区Bの方が、更に、アスタキサンチン+γ−オリザノール含有区Cの方が変色の進行が効果的に抑制された。
ブリ類用配合飼料におけるアスタキサンチン及びγ−オリザノールの配合比によるブリ切り身の貯蔵中における変色予防効果への影響について試験するために、配合飼料中のアスタキサンチンとγ−オリザノールの配合比について、次の配合比の飼料を調製し、実施例1と同様にして、飼育実験を行った:[7mg/kgアスタキサンチン+10mg/kgγ−オリザノール]、[7mg/kgアスタキサンチン+50mg/kgγ−オリザノール]、[7mg/kgアスタキサンチン+150mg/kgγオリザノール]。
結果を図3(ブリ類用配合飼料におけるアスタキサンチン及びγ−オリザノールの配合比によるブリ切り身の貯蔵中における変色予防効果)に示す。図3に示されるように[7mg/kgアスタキサンチン+10mg/kgγ−オリザノール]配合区に比べて、[7mg/kgアスタキサンチン+50mg/kgγ−オリザノール]配合区(飼料中のアスタキサンチン含有量に対して、約7倍量のγ−オリザノール)では著しく変色が抑制された。そして、[7mg/kgアスタキサンチン+150mg/kgγオリザノール]配合区(飼料中のアスタキサンチン含有量に対して、約20倍量のγ−オリザノール)でも変色が抑えられ、その効果は[7mg/kgアスタキサンチン+50mg/kgγ−オリザノール]配合区とほぼ同等であった。これらのことから、飼料中のアスタキサンチン含有量に対して、約7〜20倍量のγ−オリザノールを配合することにより、ブリ切り身の低温貯蔵及び/又は冷凍貯蔵中における顕著な変色予防効果が得られることが示された。
Claims (1)
- 飼料中のアスタキサンチン含有量が5〜20mg/kgであり、該飼料中のアスタキサンチン含有量に対して、7〜20倍量のγ−オリザノールを配合した飼料を用いて、水揚げ前の2か月間ブリ類を飼育することを特徴とするブリ類の低温貯蔵及び/又は冷凍貯蔵中における血合い肉の変色防止方法。
