発明の詳細な説明
本発明は、ドコサヘキサエン酸（ｄｏｃａｓｏａｈｅｘａｅｎｏｉｃ ａｃｉｄ）（ＤＨＡ）およびエイコサペンタエン酸（ｅｉｃｏｓａｐｅｎｔａｅｎｏｉｃ ａｉｃｄ）（ＥＰＡ）を含む油組成物のエマルションに関し、本エマルションは、本質的にパルミチン酸アスコルビルを含まないことを特徴とする。
ＰＵＦＡ油のエマルションはよく知られている。これらは多数の適用分野において使用することができ、液体または乾燥形態で使用される。
ＰＵＦＡ油は多価不飽和脂肪酸であり、非常に酸化しやすい。その事実のために、エマルションは、通常、油の酸化を防止するための成分を含む。
一方で、天然および／または有機であるエマルションを提供する強い傾向がある。
本発明との関連での「天然」および「有機」という用語は、これらが販売される国によって設定される法律上の定義に関連する。
例えば、欧州連合にはＥＵ環境規制（ＥＵ−Ｅｃｏ−ｒｅｇｕｌａｔｉｏｎ）があり、米国には全米有機プログラム（Ｎａｔｉｏｎａｌ Ｏｒｇａｎｉｃ Ｐｒｏｇｒａｍ）（ＮＯＰ）規格があり、そして日本にはＪＡＳ規格がある。
本発明の目標は、ドコサヘキサエン酸（ＤＨＡ）およびエイコサペンタエン酸（ＥＰＡ）油を含み、国家規制（特に、欧州（ＥＵ）、ＵＳＡ、日本および中国における規制）に従って天然および／または有機であるエマルションを提供することであった。
従って、本発明は、
エマルションの全重量を基準として５〜４０重量％（ｗｔ％）のドコサヘキサエン酸（ＤＨＡ）およびエイコサペンタエン酸（ＥＰＡ）油と、
エマルションの全重量を基準として３〜１５ｗｔ％の少なくとも１つの乳化剤と、
エマルションの全重量を基準として１〜５ｗｔ％のアスコルビン酸および／またはクエン酸と、
エマルションの全重量を基準として０．５〜５ｗｔ％の少なくとも１つの塩基と、
エマルションの全重量を基準として３５〜９０．５ｗｔ％の水と、
１５０ｐｐｍ〜１０００ｐｐｍの少なくとも１つのトコフェロールと、
１０００ｐｐｍ〜５０００ｐｐｍのローズマリー抽出物と
を含むエマルションに関し、本エマルションのｐＨ値は５〜７であり、本エマルションは本質的にパルミチン酸アスコルビルを含まず、そして本エマルションは天然および／または有機である。
本発明との関連では、本質的にパルミチン酸アスコルビル（ＡＰ）を含まないとは、「有機」および「天然」の法律上の定義に従って、本発明に従うエマルションがそれでも「有機」および／または「天然」と見なされることを意味する。
本発明に従うエマルションの全ての成分は天然および／または有機である。これは、エマルションの全ての成分が、天然および／または有機プロセスを用いて生成（または抽出）されることを意味する。
ＤＨＡおよびＥＰＡ油は、植物および／または動物などの任意の天然および／または有機源に由来し得る。ＤＨＡなどのオメガ−３脂肪酸の１つの源は動物源を含む。動物源の例としては、水生動物（例えば、魚、海洋哺乳類、ならびにクリル（ｋｒｉｌｌ）および他のオキアミ属（ｅｕｐｈａｕｓｉｄ）などの甲殻類）、および動物組織（例えば、脳、肝臓、眼など）、および卵または乳などの畜産物が挙げられる。
ＤＨＡおよびＥＰＡは、種々のレベルまで精製することができる。このような精製は、当業者に知られている任意の手段によって達成することができる。本発明との関連では、精製は、精製された油が天然および／または有機であることを可能にしなければならない。

本発明に従うエマルションにおいて使用される乳化剤も天然および／または有機である。このような乳化剤は任意の源から得ることができ、本発明に従うエマルションに適した乳化剤は、レシチン、乳清タンパク質、アカシアガム（水抽出）、加水分解コラーゲン、ペクチンおよび魚ゼラチンである。特に好ましいのは魚ゼラチンである。
アスコルビン酸およびクエン酸は天然および／または有機である。通常、これらは植物に由来する。
本発明に従うエマルションで使用される塩基は（化学的に）有機または無機であり得る。しかしながら、塩基は、上記のような法律用語の有機の基準を常に満たさなければならない。特に好ましい塩基はＮａＯＨである。
「トコフェロール」という用語は、ｄｌ−α−トコフェロール、ｄ−□−トコフェロール、β−、□−、および□−トコフェロールおよびこれらの混合物を意味し、それにより、本発明に従うエマルションで使用されるトコフェロールは天然および／または有機である。
いくつかの実施形態では、トコフェロールは１５０ｐｐｍ〜１０００ｐｐｍの量でエマルション中に存在し、好ましい実施形態では、トコフェロールは２００〜８００ｐｐｍで存在する。
トコフェロール（またはトコフェロールの混合物）はエマルションに混合させることもできるし、あるいは、まずＰＵＦＡ油中に混合させてから、混合物としてエマルションに添加することもできる。
本発明に従うエマルションはローズマリー抽出物を含む。
「ローズマリー抽出物」という語句は、抗酸化活性を有するローズマリーから得ることができる任意の抽出物を意味する。抽出は、得られるローズマリー抽出物が天然および／または有機であるような方法で実行される。
ローズマリー（ロスマリヌス・オフィシナリス（Ｒｏｓｍａｒｉｎｕｓ ｏｆｆｉｃｉｎａｌｉｓ）、シソ科）は地中海地域に遍在する植物であり、抗酸化性および抗菌性の薬理学的特性を特徴とする。
ローズマリー抽出物は天然であり、ローズマリー植物から抽出される既知の材料である。
ローズマリー抽出物は、シソ属に属するローズマリーの葉を乾燥させ、乾燥葉を微粉砕し、得られた微粉材料を、水、温水、ヘキサン、エタノール、アセトン、酢酸エチル、またはこれらの溶媒のいずれかの混合物による抽出にさらすことによって得ることができる。「ローズマリー抽出物」という用語は、本明細書で使用される場合、数個の異なる活性成分を含有し得るいくつかの異なる化学組成物を説明する包括的な用語である。ローズマリー抽出物中に見られる一般的な成分の中には、カフェイン酸、カルノソール、カルノシン酸、メトキシカルノシン酸、ロスマリン酸、ロスマノール、およびロスマリジフェノールがあり、これらは全て、個々の抽出物によって異なる割合で存在し得る。また多数のローズマリー抽出物は市販もされており、任意の１つまたは複数を本発明において使用することができる。
適切なローズマリー抽出物は、すなわち、Ｋａｌｓｅｃ（Ｋａｌａｍａｚｏｏ，ＭＩ，ＵＳＡ）またはＮａｔｕｒｅｘ（Ａｖｉｇｎｏｎ，Ｆｒａｎｃｅ）などの会社から市販されている。
本発明に従うエマルションは、１０００ｐｐｍ〜５０００ｐｐｍ、好ましくは５００ｐｐｍ〜４０００ｐｐｍ、より好ましくは５００〜３５００ｐｐｍのローズマリー抽出物を含む。
さらに、本発明は、全ての成分および全ての工程段階が天然および／または有機である、本発明に従うエマルションの製造方法に関する。
本発明に従うエマルションは、このようなエマルションが必要とされる任意の用途で使用することができる。
すなわち、本エマルションは、食品、飼料またはパーソナルケア製品において使用することができる。
これらの製品は、液体、ゲル様または固体などの任意の形態であり得る。これらの製品は、すぐに使える（すぐに消費できる）製品、およびさらなる加工（例えば、希釈、溶解、加熱などによる）を必要とする製品であり得る。
特に重要なのは、このようなエマルションの飲料などの食品における使用である。
以下の実施例は本発明を説明する。感覚値およびランシマット（ｒａｎｃｉｍａｔ）値は、上記のように決定される。

油相および水相を別々に調製してから、適切な予備均質化装置（例えば、ロータ−ステータ、マイサーディスク（ｍｉｃｅｒ ｄｉｓｋ）など）を用いて油相を水相中に均質化させ、続いて高圧均質化を適用することによって、エマルションを生じさせた。
このエマルションのｐＨ値は６である。
この天然および有機エマルションは貯蔵安定性であり、任意の配合物中に取り込むことが容易である。

Claims (10)

  1. エマルションの全重量を基準として５〜４０ｗｔ％のドコサヘキサエン酸（ＤＨＡ）およびエイコサペンタエン酸（ＥＰＡ）油と、
    エマルションの全重量を基準として３〜１５ｗｔ％の少なくとも１つの乳化剤と、
    エマルションの全重量を基準として１〜５ｗｔ％のアスコルビン酸および／またはクエン酸と、
    エマルションの全重量を基準として０．５〜５ｗｔ％の少なくとも１つの塩基と、
    エマルションの全重量を基準として３５〜９０．５ｗｔ％の水と、
    １５０ｐｐｍ〜１０００ｐｐｍの少なくとも１つのトコフェロールと、
    １０００ｐｐｍ〜５０００ｐｐｍのローズマリー抽出物と
    を含むエマルションであって、前記エマルションのｐＨ値が５〜７であり、本質的にパルミチン酸アスコルビルを含まないエマルション。
  2. 前記エマルションが天然および／または有機である、請求項１に記載のエマルション。
  3. 前記乳化剤が、レシチン、乳清タンパク質、アカシアガム（水抽出）、加水分解コラーゲン、ペクチンおよび魚ゼラチンからなる群から選択される、請求項１または２に記載のエマルション。
  4. 前記乳化剤が魚ゼラチンである、請求項１〜３のいずれか一項に記載のエマルション。
  5. 使用される前記塩基がＮａＯＨである、請求項１〜４のいずれか一項に記載のエマルション。
  6. 前記トコフェロールが、ｄｌ−α−トコフェロール、ｄ−α−トコフェロール、β−、γ−、およびδ−トコフェロールからなる群から選択される、請求項１〜５のいずれか一項に記載のエマルション。
  7. ２００〜８００ｐｐｍのトコフェロールが使用される、請求項１〜６のいずれか一項に記載のエマルション。
  8. ５００ｐｐｍ〜４０００ｐｐｍのローズマリー抽出物が使用される、請求項１〜７のいずれか一項に記載のエマルション。
  9. 請求項１〜８のいずれか一項に記載のエマルションの、食品、飼料またはパーソナルケア製品における使用。
  10. 請求項１〜８のいずれか一項に記載のエマルションを含む、食品、飼料またはパーソナルケア製品。
