【発明の実施の形態】本発明における清酒酵母エキス
は、日本酒製造過程において得られる生長した清酒酵母

セス属に属する協会6号酵母、協会7号酵母、協会9号
酵母、協会10号酵母、協会11号酵母、協会12号酵

901号・1001号、及びこれらの変異株酵母などの
清酒酵母を挙げることが出来る。そして、清酒酵母エキ
スの生成は、かかる清酒酵母を用いて日本酒を製造する
過程において得られる生長した清酒酵母を原料とし、こ
れに水等の混液を加えて清酒酵母の細胞壁を溶解せし
め、内部に含まれるエキスを加温抽出せしめる。このさ
い、60℃で30分間加温抽出せしめるのが望ましい。
次いで、約15℃の室温下に約6〜12時間放置せしめ
たのち、遠心分離機により清酒酵母エキスを分離し、数
