mol/g添加して行い、未添加のリノール酸メチルの
過酸化率を100%として比較した。また比較対象とし
て、既知の抗酸化剤であるBHT(ブチルヒドロキシト
ルエン)を用いた。その結果、図1に示すように本発明
で用いるベジテーション水の有機溶媒抽出物は優れた抗
