Abstract

Un forno di cottura domestico prevede l'utilizzo esclusivo o parziale, in tal caso per una cottura di tipo misto, del vapore ottenuto direttamente all'interno del recipiente di cottura nel quale viene alimentata acqua da un serbatoio mediante un tubicino passante attraverso la parete laterale del recipiente stesso e richiamata mediante elettrovalvola o erogata mediante elettropompa. L'elemento riscaldante che produce vapore direttamente nel recipiente, costituito preferibilmente da una teglia con pareti e fondo in acciaio e coperchio eventualmente trasparente come in pyrex, viene posto sulla base del forno al centro della teglia stessa, il cui fondo presenta preferibilmente una sporgenza di contenimento dell'acqua e si appoggia a contatto sull'elemento riscaldante per l'evaporazione e sulla suola del forno provvista eventualmente di altri elementi riscaldanti per la cottura tradizionale. Preferibilmente all'interno della teglia si ha una griglia di sostegno del cibo da cuocere e di separazione dell'acqua sul fondo.
