Abstract

Dispositivo di generazione del vapore per forno di cottura degli alimenti, comprendente una camera di cottura chiusa (8) provvista di un ventilatore (12) e di un elemento riscaldante (14) a gas oppure elettrico. Dispositivo comprendente un anello rotante (21) tronco-conico calettato sull'albero di azionamento (25) del ventilatore (12) e sulla cui superficie interna (30) viene diretta dell'acqua passante attraverso un condotto (27), disposto assialmente nell'interno dell'anello rotante (21). L'acqua viene così trasferita su tale superficie interna (30) e proiettata radialmente, in corrispondenza del bordo circonferenziale (32) dell'anello rotante (21), verso l'elemento riscaldante (14) che la vaporizza istantaneamente determinando così la cottura degli alimenti.In questo modo, viene ottenuto vapore acqueo con elevata efficienza ed in notevole quantità.
