1284350 Colouring F HOFFMANN LA ROCHE & CO AG 29 Oct 1970 [31 Oct 1969] 51514/70 Heading A2B [Also in Division C2] Water-dispersible colouring agents for foodstuffs, drinks and confectionary comprise crocetin diesters of formula wherein R 1 and R 2 represent alkyl groups containing together from 16 to 40 carbon atoms and a physiologically tolerable emulsifier. Diesters mentioned are di-n-decyl, di-n-dodecyl, di-n-tetra-decyl and di-n-hexadecyl (see Division C2) or the ester moieties may be unlike, or mixtures of esters may be used. The agents may 'be prepared by dissolving at least one ester, an emulsifier e.g. esters of mono- or diglycerides of aliphatic polycarboxylic acids such as tartaric or citric acid; esters of hydroxy aliphatic acids such as stearyl lactate; or salts of ascorbic acid such as palmitoyl ascorbate. Anti-oxidants, crystallisation-inhibitors, preservatives, solubilising agents may also be present. The colouring agent may contain a swellable colloid to improve compatability in hard water and the product may be in dried form containing up to 10% of diester. The agents may be used in solution for colouring fruit drinks, ices, confectionery, syrups, preserves, and mayonnaise, or in dry form for colouring puddings, soups, and lemonade powder. In examples compositions of crocetin di-n-dodecyl ester with di-α- tocophenol, palmitoyl ascorbate, gelatine, sucrose and sodium carbonate are dried and used to colour ice-cream, or grape-fruit concentrate, or made into a viscous syrup with invert sugar to colour bon-bons or yoghurt.
