Abstract

1418544 Dietetic foods PFIZER INC 24 Sept 1973 44741/73 Heading A2B In a dietetic food composition ordinarily comprising a fatty triglyceride- and optionally a carbohydrate-containing food, at least a part of said triglyceride is replaced by a water soluble highly branched polyglucose wherein the 1-6 linkage predominates, said polyglucose having a number average molecular weight of 1,500-18,000 and containing 0.5-5 mole% carboxylic acid ester groups derived from citric, fumaric, tartaric, succinic, adipic, itaconic, and malic acid. The polyglucose may have 5-20 wt% sorbitol chemically bonded thereto. The carbohydrate content may also be replaced by the polyglucose. Foods mentioned include baked goods, ice foods, fruit preserves, jellies, confectionery, icings, beverages, syrups, toppings, sauces, puddings, salad dressings, and as bulking agents in dry low calorie sweeteners.
