Abstract

An alcoholic beverage having a flavour similar to those of matured alcoholic beverages and substantially free from higher branched-chain alcohols comprises ethyl alcohol, from 2-175 microlitres of an ester of an aliphatic acid and an aliphatic alcohol, which ester has not more than ten carbon atoms from 0-150 microlitres of n-propanol, and from 0-350 microlitres of an aliphatic, non-toxic, ethanol-soluble polyhydric alcohol for each 100 ml. of 100 proof ethyl alcohol. The beverage may include also up to 25 microlitres of acetaldehyde and sufficient acetic acid to give a pH of approximately 4.5. Esters mentioned: ethyl acetate, ethyl formate, ethyl propionate, n-butyl formate and n-amyl acetate. Polyhydric alcohols mentioned: glycerol, ethylene glycol and propylene glycol. The preparation of beverages resembling Scotch, Irish, Canadian, rye, and bourbon whiskies, bland and sharp whisky blends, apple and grape brandies, and rum, are disclosed. According to an example directed to the preparation of a substitute for Scotch whisky, 55 ml. of ethyl alcohol (190 proof) were used to soak for 10 minutes at 60 DEG C., 10 g. of oak chips which had been lightly toasted in peat smoke; after removal of the chips, the liquid was diluted with 45 ml. of water. To the mixture there were added 3 microlitres of ethyl acetate and 0.5 microlitre of n-propanol, and to 100 ml. of the resulting solution there were added 20 microlitres of propylene glycol and sufficient acetic acid to bring the pH to 4.5. The beverage had an excellent flavour and smoky tang.
