Abstract

A concentrate of hops in wort-soluble form is prepared by treating freshly-gathered hops with a solvent, e.g. a lower aliphatic monohydric alcohol, ether, ketone, or ester of acetic acid, and preferably methanol, in which a and b soft resins and volatile oils are soluble, and separating the extract. The solvent, which may also dissolve chlorophyll and carotene, may be flowed over the hops, and the extraction is preferably performed at approximately ambient temperature. The extract is concentrated by evaporation under reduced pressure and the last traces of solvent are removed by washing with water. One or two grams of the concentrate are added to each gallon of wort.
