[Also in Group I] A method for drawing off wort from an upstanding straining tank containing mash comprises: drawing off the first wort through a multiplicity of draw-off levels each positioned below the top of the mash, introducing sparge water directly into the mash at one or more points below the top of it, and drawing off the wort simultaneously through a multiplicity of draw-off levels. Mash and water are pumped in at 14 to the level of a nozzle 43. Wort is then withdrawn from some or all of the horizontal arrays of perforated pipes 17 to a wort header 30. The wort is recirculated through a vessel 35, a pump 40 and nozzle 43 and the above process repeated, until the wort is clear, whereupon it is collected for use in brewing. Next, sparging water is introduced into the tank through a conical screen 12 and wort withdrawn as before; also, water may be introduced through any of the pipe arrays 17 and wort removed from the remainder. Specific gravity of wort from any level may be determined by saccharometers 46. Finally water is introduced through all pipes 17 and a flushing ring 33 and the grains washed out through a bottom opening 61.
