730,535. Tubular heat-exchangers. MIKROVAERK AKTIESELSKAB. Nov. 25,1953 [Nov. 27, 1952], No. 32736/53. Class 64 (3). [Also in Group VI] In apparatus for tempering chocolate (see Group VI), tubes 2 through which molten chocolate flows extend between tube plates 10, 11 and are surrounded by a wall 13. Coolant such as water is caused to flow over the tubes being uniformly distributed thereover by baffles 16, 17 having clearance holes through which the tubes pass. The tubes may be conical. In the apparatus shown two spaced superimposed tube units are provided, the molten chocolate flowing upwardly in series through the tube groups. Rotary plates 22, 26 are provided respectively beneath each tube group and are each formed with a sector-shaped opening 25. This arrangement it is stated provides a stepwise or pulsating movement of the chocolate through the tubes.
